  • Combine sugar, cream of tartar, and orange juice in a saucepan. Cook over low heat, stirring gently until sugar dissolves. Cover orange mixture, and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook over medium heat to a soft ball stage (240F).
  • Remove from heat, and beat with a wooden spoon just until mixture begins to thicken. stir in pecans and oranger ind. Working rapidly, drop by heaping teaspoonfuls onto waxed paper; let cool.
