ingredients
- 236.59 ml wheat bran
- 354.88 ml oat bran
- 236.59 ml of soft whole wheat flour
- 236.59 ml of golden flax seed, grind in coffee grinder after measuring
- 14.79 ml baking powder
- 2.46 ml salt
- 4.92 ml baking soda
- 236.59 ml brown sugar
- 354.88 ml raisins
- 2 whole oranges, washed quartered and seeded
- 236.59 ml buttermilk
- 118.29 ml canola oil
- 2 eggs
directions
- Preheat oven to 375°F.
- Mix all dry ingredients together in a mixing bowl.
- Place oranges in a food processor and blitz until finely chopped.
- Add other liquid ingredients, and blitz until combined.
- Pour liquids into mixing bowl and combine with the dry ingredients until just barely incorporated.
- Scoop into 24 medium greased muffin cups and bake for 18-20 minutes until browned.

These muffins were very moist and delicious. I love the mix of grains used in them! Only thing I would do differently next time is pulse the orange flesh in a food chopper to be sure that it was completely chopped down. I used a cutting board this time and did not dice fine enough, hence a few tart spots in places. But otherwise I LOVED these muffins. You'd never guess they are this healthy. I made these according to the recipe, subbing dried cranberries for raisins. They were good, very nice texture. They tasted somewhat bitter, though, so I would probably recommend grating the peel and discarding the pith, as recommended in the description, instead of using the whole peel. Very healthy, though, and tasty with some margarine and jelly.

WOWEE! These are so YUMMY! I couldn't stop eating them and can't believe they are healthy! I made a half recipe following your suggestion of zesting the orange and chopping the flesh. I used 1/2 cup Splenda brown sugar blend and ground toasted flax seeds with blueberries. I subbed dried cranberries and dried blueberries for the raisins. These are very soft with a nice texture and wonderful orange flavor with surprises of sweet/tangy dried fruit. I especially LOVED these heated in the microwave with a little bit of butter.
