  • Preheat oven to 350 degrees, and line 18 muffin cups with paper liners.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add egg, beat well, then add vanilla and mix.
  • In another bowl, combine flour, baking powder and salt.
  • Mix orange extract with orange juice.
  • Add half the flour mixture to the butter mixture, mix well, then add half the juice mixture and mix; repeat.
  • Spoon batter into prepared cups, sprinkle with some sugar if you want crunchy muffin tops.
  • Bake for 25-30 minutes, until golden brown.

  2. Sorry, but I thought they were just ok. The flavor was much milder than I expected, & I also got only 15 muffins. I did make an orange glaze ( powdered sugar, OJ, & orange extract) which did help.
     
  3. These muffins are super-moist and delicious! I didn't have any orange extract, so I just put in some orange zest instead. I will probably reduce the amount of sugar to 3/4 next time, though. Baked them at 180*C for 20-23 mins. Definitely making these again. TY for posting.
     
  4. Nice, light and fluffy muffin. I didn't have any orange extract, so my muffins weren't as orange-y as I would have liked. This would be great with cream cheese frosting or dried cranberries!
     
  5. These muffins were great. I had wanted to make muffins but I was out of milk, so this was perfect. I didn't have orange extract, but they seemed to be orangey enough without it. Next time I might add orange zest and chopped cranberry.

Tweaks

  1. I really enjoyed these. I used orange concentrate instead of orange juice. This upped the flavour considerably I think. Still have quite a few frozen to enjoy later. Thanks najwa

Hi .. The pic is of my beautiful son, born on 2/5/2005. His name is Tariq, meaning Bright Star. As I type this, he is blowing bubbles in his water cup and watching cartoons. He whined to get this water for 15 mins and now he won't drink it, he will only play with it. Sigh.. A few days ago he came up with this song, so sing along to the tune of "Old McDonald" : Old McTariq Laq Laq Laq E I E I OOOOOO LOL I thought it was the cutest thing :-) When I'm not running around after my son, or cleaning up the mess he makes wherever he goes, I cook and bake (my husband loves the blueberry muffins I make) and I love trying new recipes .. I also love to read, and collect sci-fi/fantasy novels .. I have over 500 books and still counting ..
