I think I got this out of one of the Moosewood cookbooks. 4 servings 30 min
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 garlic clove, minced
- 1 lb sweet potato, peeled and cut into 1 inch pieces
- 1 cup orange juice
- 1⁄4 cup lime juice
- salt and pepper
- Sauté onion and garlic in oil. Add sweet potatoes and juices.
- Heat to boiling. Reduce to a simmer.
- Cook until the potatoes are just tender. Season to taste with salt and pepper.
