I liked this very much, but my wife was not thrilled with it. I have eaten jicama before on salad bars and loved it but was never able to find out what it I know.

  1. Line plates with lettuce.
  2. Tob with orange slices.
  3. Mound with jicama.
  4. Sprinkle with chopped red onion.
  5. Blend juice, vinegar, salt & pepper in small bowl.
  6. Whisk in oil in thin stream.
  7. Spoon over salads. garnish with minced cilantro.
