Orange Honey Vegetable Soup

- 1 lb stew beef chunk (optional)
- 1 tablespoon extra virgin olive oil
- 1 large garlic clove (pressed)
- 1 beef bouillon cube
- 1⁄4 cup honey
- 1⁄2 cup orange juice concentrate
- 1⁄2 cup cooking sherry
- 1 cup baby carrots
- 1 cup dried shiitake mushroom
- 1 cup baby carrots
- 2 cups stir fry vegetables (frozen)
- 3 cups water
- 1⁄2 teaspoon peppercorn
- 5 Red Bliss potatoes, quartered
- 2 stalks celery
directions
- Dissolve bullion into a cup of hot water. Next add the honey to the hot water.
- Cut celery into 1 inch pieces. Place all vegetable ingredients into your crock pot.
- Put (optional) meat on top of vegetables, keeping away from the sides if possible as the vegetables will need to cook more than the meat.
- Add the pepper, cooking wine and the honey-water, then add enough of the remaining water to cover the meat. My 4 1/2 quart crock pot took almost 2 additional cups, but for you this may differ.
- Cook in your Crock pot on the low setting for 8 to 10 hours. Enjoy!
