another atkins cook book recipe.
- 225 g peeled and sliced daikon radishes or 225 g jicama
- 2 tablespoons sunflower oil
- 1 tablespoon red wine vinegar
- 1 teaspoon grated orange zest
- place daikon in a bowl.
- in another bowl, whisk the oil vinegar, oil, orange zest adn salt until dressing is well blended pour dressing over the daikon, toss salad well.
- serve immediately.
Good recipe if you are a daikon fan. The dressing works really well.
