Orange Chocolate Chip Muffins (low fat)

"Reduce the fat content without reducing the taste! These muffins are great and work well with a variety of fruit. You can also adjust the fruit and chocolate chips to your tastes. I made a dozen of these to take to the old-age home where I volunteer and when I came into the kitchen a couple of hours later, half of them were gone!"

  • Puree oranges in a blender.
  • Add in sugars, milk, and egg.
  • In a large bowl, combine flour, baking soda, and salt.
  • Add the orange mixture to the flour mixture and mix well.
  • Fold in chocolate chips.
  • Spoon batter into muffins tins.
  • Bake 30 minutes at 350 degrees.

  1. Loved these, though I've always loved the combination of orange and chocolate!!! Not too wet. Depends on the size of your oranges. I used smaller ones with thinner skins, and 3 was just fine. Big ones might give more juice, but the big oranges I've purchased lately also have a thicker layer of the white pith, which doesn't taste well. Have also made this with 4 clementines. I do love my chocolate dark, so I added about 1/4 cup of Cocoa to the batter and about 1/2 cup chopped walnuts for some healthy fats.
     
  2. These were great on my second try. Definitely use 2 medium sized oranges; if they're large, maybe one and a half. Three was toooo much - they turned out more like a thick pudding first time around. I put the entire orange in - rind and all, cut into eighths (with any seeds removed). I also used whole wheat pastry flour with good success and more fiber. The final end result deserves 4 stars; I deduct one for needing slightly better instructions.
