Orange Chicken with Fruited Rice

  1. Preheat oven to 425 F degrees.
  2. In 9 inch square baking pan, mix rice, broth, orange juice, cranberries, fruit bits, and onion.
  3. Place chicken pieces on top of rice mixture.
  4. Brush chicken with orange juice concentrate and sprinkle with onion powder.
  5. Cover tightly with aluminum foil.
  6. Bake 1 hour and 15 minutes to 1 hour and 30 minutes until chicken is cooked through and rice is tender.
  7. Let stand 5 minutes before serving.

I make this with all kinds of chicken pieces and it always works out. I also sometimes skip the cranberries and use just dried fruit. YUM. Really different chicken.
