  • Place chicken breasts in small roaster with a drizzle of olive oil.
  • Sprinkle paprika, onion powder, salt and pepper on top of chicken breasts.
  • Slice mushrooms and place around chicken.
  • Roast in oven at 375* with lid on for 30 minutes.
  • Remove lid and roast for another 15 minutes.
  • Remove breasts, place on plate and cover with tin foil.
  • Drain grease from roaster but leave in juices.
  • Add orange juice and chicken broth, give a stir and bring to a boil over medium heat.
  • Boil down, about 5 - 10 minutes until a syrup sauce develops. Add 1 tsp butter and stir.
  • Serve drizzled over chicken breasts and rice.
