ingredients
- 1 cup sugar
- 1 teaspoon cornstarch
- 1⁄2 cup vinegar
- 1⁄4 cup water
- 3⁄4 teaspoon salt
- 3 teaspoons ketchup
- 1 teaspoon honey
- 1 teaspoon orange extract (found near the vanilla)
- 1 1⁄2 lbs chicken breasts
- 2 eggs
- 1⁄2 cup all-purpose flour
- 1 teaspoon garlic powder
directions
- Cut chicken into pieces.
- In one dish, put 2 eggs with a dash of salt. In another put flour with one teaspoon garlic powder.
- Coat the chicken in the egg, then the flour.
- Brown the chicken in olive oil in a skillet.
- Preheat the oven to 350 degrees.
- Mix the remaining ingredients together to form the sauce.
- Put chicken in a casserole dish. Put half the sauce over and cook for 15 minutes.
- Flip and put remaining sauce and cook for another 15 minutes.
- Serve over white rice.

Very tasty, loved the simple ingredients. I was too lazy to brown then bake the chicken, so I just cooked the chicken in a pan then added the sauce to thicken. (The chicken is not crispy this way, though.) The sauce was very thin this way, so I used 2 TB cornstarch. I may lower the sugar next time, as it was a bit too sweet for me (but my sweet-tooth family loved it). I added some cooked broccoli and sprinkled a little crushed red pepper on top. It made a lot of sauce, which my family likes, and you could certainly add more veggies because of this.

Although I did reduce the amount of salt to 1/2 teaspoon, other than that, I followed the recipe & the resulting chicken TASTED GREAT! As a final touch, I did take several slices of unpeeled orange & then cut the slices in half & again sliced them from the center outward, sort of into slender orange picks! Then I simple 4 or 5 on top ot the sauced chicken & rice! Thanks for a keeper recipe! [Tagged, made & reviewed for one of my adopted chefs in the current Pick A Chef]
