I am not a fan of beets, but my mother made these for the holidays and it was the ONLY way I would eat beets. That says a lot.
- 1⁄2 cup sugar
- 1⁄2 teaspoon salt
- 2 tablespoons water
- 1 tablespoon cornstarch
- 1⁄2 cup vinegar
- 1 medium orange
- 3 1⁄2 cups canned beets (drained)
- butter (to taste)
- Combine first five ingredients in sauce pan. Heat slowly and stir until clear.
- Add grated orange rind and juice of orange. Add beets and heat through.
- Add butter to taste before serving.
I wanted a different side dish in addition to a green vegetable. I had a can of beets (boring). I searched "beets" and came up with this recipe. It was absolutely great. It was like eating candy. BTW, I used Splenda in place of real sugar. So we didn't feel so guilty.
These quick and easy beets were surprisingly good. My family loves beets, but we have never had them prepared this way. The tangy sweet/ sour orange sauce compliments the flavor of the beets. I used 2 (15 oz.) cans of beets. Thank you for sharing this wonderful, new way of preparing beets. *Made for Fall PAC 2008*
