Orange and Cardamom Cake

I made this for a birthday a few years ago and it was divine! An alternative birthday cake. Very sweet with drizzle on top or you could try making an orange icing. If you can't find canola oil, use vegetable oil such as sunflower.

Delicious. Orange and cardamom are a perfect match, and in this cake, none of them overpower the other. I used only orange zest as this is what I had. I also cut the sugar to 200g as I was worried the cake would be too sweet (based on the recipe description) but in the end, 200g was not too much, so I'd stick to 300g of sugar next time. Concerning pan size: I halved the recipe and poured my batter in a 8x8" pan (~20x20 cm) and had a thin 1" 1/2 high cake (~4 cm high). So I guess if you make the full recipe and use a 8x8" pan, you'll get a thick cake. I also baked much less than 50 min (maybe 30 min?) Baking time will depend on pan size, etc., but be sure to check on your cake regularly. I will certainly make this again this winter, so thanks EydisElle for the recipe!

  1. Preheat oven to 180C.
  2. Combine flour, sugar, baking powder, cardamom, cinnamon and salt in a large mixing bowl.
  3. In a separate bowl, beat the eggs together til smooth.
  4. Make a well in the centre and add orange juice, canola oil, orange and lemon zests, vanilla essence and eggs.
  5. Mix well til light and fluffy.
  6. Spoon into cake tin (not sure of size, just guessed).
  7. Bake for 50mins or until an inserted skewer comes out clean.
  8. Leave to cool.
  9. Prepare glaze; whisk all ingredients together, poke a fork all over the top of the cake and pour mixture over while still warm.
  10. Leave to cool completely.
