This is a very easy and simple cake. There is a tiny bit of orange liquer and sugar sprinkled on the top and really make this special. I got this from an old Betty Crocker cookbook I found when cleaning out my mother-in-laws kitchen. I've adapted it to fit a lower fat diet.
- 1 1⁄4 cups all-purpose flour (or 1 1/2 cups cake flour)
- 1 cup sugar or 1 cup Splenda sugar substitute
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 3⁄4 cup 1% low-fat milk
- 1⁄3 cup canola oil
- 1⁄4 cup egg substitute
- 2 teaspoons orange rind, grated
- 1⁄4 cup sliced almonds
- 1 tablespoon sugar or 1 tablespoon Splenda sugar substitute
- 2 tablespoons orange-flavored liqueur

- Heat oven to 35o.
- Grease and flour square cake pan (8x8x2).
- Beat all ingredients until smooth, except almonds, 1 tablespoon sugar and the liquer.
- Pour into pan.
- Sprinkle with almonds.
- Bake 40-45 minutes, or until wooden pick inserted in center comes out clean.
- Sprinkle with tablespoon sugar.
- Poke holes randomly around top of cake and drizzle with liquer.
- Cook 10 to 15 minutes.
- Remove from pan and cool completly before cutting.
