    From Skandland.com Posted for ZWT3. Ingredient amounts are approximate for 4 sandwiches. Open-faced sandwiches are traditionally eaten with a knife and fork. I remember eating similar sandwiches for breakfast in Estonia.

      Butter the bread.

      Place a leaf of lettuce on top of the sandwich and a slice of ham on top of the lettuce leaf.

      Put sliced hardboiled eggs on top of the ham and sprinkle chopped chives over the sandwich.

      Simple and delicious! I made this for my breakfast on Sunflower Flax bread as I didn't have any pumpernickel, and it was lovely. Thanks for posting. Made for ZWT 3:)

      Loved it! My eggs were still warm and this was a wonderful lunch. I did have to make it into a closed face sandwich though becuase I kept loosing the egg off the top LOL. I went shopping for ham and chives yesterday evening and that's a double edged sword shopping time... yes it was wonderfully quiet but the only chives they had left in the herb corner looked limp and nasty and they just shrugged their shoulders in a take them or leave them attitude, so I left them... Next time when I'm at my regular supermarket I will get them to include becuase I adore chives. This was healthy and filling and gave me an energy burst for the afternoon. Please see my rating system: that's worth 4 stars. Thanks!
