Open-Faced Avocado Sandwiches

Another recipe from my Mom. These are great with iced tea on a hot day.

Ingredients Nutrition

  • 1 large avocado, peeled, pitted and cut into thin slices
  • 13 cup Italian dressing
  • 4 tablespoons mayonnaise
  • 4 slices bread, toasted (oatmeal or whole wheat is best)
  • 4 slices provolone cheese (whatever your preference. Mom's original recipe called for American) or 4 slices gouda cheese (whatever your preference. Mom's original recipe called for American) or 4 slices gruyere (whatever your preference. Mom's original recipe called for American) or 4 slices swiss cheese (whatever your preference. Mom's original recipe called for American)
  • 1 large ripe tomatoes, sliced into 8 slices
  • 1 cup alfalfa sprout

Directions

  1. Toss avocado slices gently with Italian dressing; drain well, reserving the dressing.
  2. Spread mayo evenly over 1 side of each bread slice. Top bread slices evenly with avocado, cheese slices, tomato and alfalfa sprouts.
  3. Drizzle sandwiches evenly with reserved Italian dressing and serve immediately.
