Open-Face, Meatless Breakfast Sandwich

  • 1 teaspoon olive oil
  • 1 egg
  • 1 frozen reduced-fat whole-wheat waffle
  • 1 vegan burger


  1. Spray a skillet with non-stick spray and heat oil in the skillet. Break the egg into the skillet and 'fry' it.
  2. While the egg is cooking, toast the waffle in a toaster or toaster oven, and heat the boca patty in the microwave--one minute per side, on high.
  3. To assemble: place the toasted waffle in a bowl, and top with the heated boca patty. Slide the fried egg on top of the patty. Salt to taste, or serve with maple syrup!

Good quick and easy breakfast! I had some crumbles on hand so used those instead of the burger. I topped with with just a little syrup and had a great breakfast treat - thanks for posting the recipe! Made for Spring PAC 2009
