Deep fried onions as light as angel wings. A heavenly topping for fish, poultry, potatoes, rice and salad.
- 1 medium maui onion
- all-purpose flour
- oil (for deep frying)
- Slice onion into paper thin rings.
- Dust with flour.
- Heat 2 inches of oil in a deep skillet or wok.
- Drop the onions in a handful at a time, stir to keep from sticking together, and fry until golden brown, Drain on paper towels.
