Onion Soup

"Here is a simple recipe that I enjoy on a cold winter day. For a lunch it is a meal by itself but for supper a side order of Bruschetta or a salad would make this complete. I've made this recipe so often, I no longer need a recipe!"

  • Melt butter in a pan. Add onions and saute on medium low until soft and translucent, about 15 minutes. Be careful not to brown too much.
  • Add sugar, salt, nutmeg, pepper and garlic powder. Cook for about two minutes.
  • Add beef broth and allow to simmer for about ten minutes to blend the flavours.
  • Add a 1/4 cup of wine or ounce of brandy if desire, stir for about 30 seconds and then ladle into onion soup bowls. Place bread on top of the soup, trimming the edges to fit inside the bowl. Sprinkle with cheese and place under the broiler. Cook until cheese is melted, bubbly and just beginning to brown. Serve hot.
  • You can also use croutons in place of the toasted bread.
