A nice change from the ordinary.
- 5 medium potatoes, peeled and cubed
- 1 small onion, chopped in lg pieces
- 3 teaspoons butter
- 1⁄4-1⁄2 cup milk
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 teaspoon dried parsley
- Put potatoes and onions in pan and cover with water.
- Bring to a boil.
- Reduce heat and simmer until very tender.
- Mash with remaining ingredients.
What a pleasant change from regular mashed potatoes. I substituted butter flavored margarine and it came out deeeeelicious. Since my family likes garlic, I sauteed some of the onions with garlic and added at the end.

I scaled this back for 3 serves and we did enjoy the mash but prefer caramelized onion for taste to boiling it with the potatoes but that again makes for an easier dish to make. Thank you MizzNezz, made for I Recommend tag game and recommended by Karen Elizabeth.
