    This is one of my favorite recipes for pork. I was inpired for the method by an article in a cooking magazine and then made it my own. The flavors are great and it really a fairly easy dish to make. Switch around the herbs and flavors, I always try something new and switch between fresh and dried herbs. I know 2 whole onions sounds like a lot for 4 servings, but they cook down and are the carrier of all of the flavor, after trying it you will probably increase it to 3! Use any kind of breadcrumbs you like, I love to make my own from whole-wheat bread and it tastes great. I truly believe it is a meal your family or friends will love to eat!

    Directions:

      Dice the onions.
    2. 2
      In a saute pan melt a small dab butter and saute the onion until starting to turn clear. This should take about 10 minutes.

      Stir in the broth and herbs and bring to a boil and simmer for 5-10 minutes.

      Meanwhile season the chops with salt {and pepper if desired}. In another saute` pan, brown the chops in a little bit of butter, do not cook through.

      Prepare a baking dish by spraying with nonstick spray.
    6. 6
      Put a small bit of the onion mixture down for each of the 4 chops, then place the chops on top. Place the remaining onion mixture on top of each of the chops.

      Combine the breadcrumbs and Parmesan cheese and sprinkle over top. Melt 1 T. of butter and drizzle over the top. Bake at 400 degrees, uncovered, for 20 minutes or until juices run clear.

      We thawed 2 porkchops tonight for this recipe. I cut the onion into large rings (I'm not a huge fan of onions- so I knew it would be easy to pick off the rings, while still flavoring the meat.) I used dried herbs (sorry, it's all I had on hand), but I did use home made bread crumbs and freshly grated parmesan cheese. This is a fabulous recipe!! I will be making it again. Thanks for sharing Nat!!
