this was outstanding! great onion flavor. i sliced 4 onions, sweated them in oil and butter for half an hour and needed 5 cups of stock to cover.i actually simmered this for half an hour, then followed the recipe. everyone enjoyed this

Maybe I did something wrong. Neither my Dh nor I cared for the taste of this soup. We used a bottle of good Bass Ale, but it just didn't blend well with the onions and the chicken stock and gave a rather bitter flavor to the soup. Sorry CL...I really wanted to like this soup and think that perhaps it's just not in tune with our taste buds.

This was different! Quite surprised with how good this came out. For the onions I chose to use Kittencal's Caramelized Onions.

I made this soup for an Oktoberfest dinner last year and it was a hit! I regularly get requests for it.

Marg, DH and DS loved this soup, the best part is it takes very little time to cook, which was a plus to prepare for a summer's day. I used my caramalized onions (Kittencal's Caramelized Onions) which I had already prepared and frozen in my freezer, and that made it even more quicker, and used a light beer. I did not have any gruyere cheese, so I used mozzarella instead. We really enjoyed this delicious soup! Thanks for sharing...Kitten:)

This is a great recipe. I've made it several times for company, and it's been a hit each time. I would stay away from a really bitter beer.. I use Cream Ale and it seems to add the right flavor.
