Onion and Tomato Noodle Soup

  • 1 large onion, quartered
  • 1 medium tomatoes, deseeded and quartered
  • 1 clove garlic
  • plain cooked noodles (any kind and as much or as little as you want)
  • salt and pepper
  • water

directions

  • Blend together the onion, tomato and garlic in a blender, until smooth.
  • Add water to it depending upon how concentrated or dilute you want the soup to be.
  • Place the mixture in a saucepan and bring to a boil.
  • Continue to cook on a low heat for 4-5 minutes.
  • Add desired amount of cooked noodles and cook for 2 minutes.
  • Add salt and pepper to taste and serve hot.

  1. A quick and easy healthy soup. We did find it a little lumpy, having blended the ingredients raw so next time would probably bake or saute the onion and tomato and then blend once cooked. This is a great recipe for Weight Watchers, as the only points are from the noodles. I also found that it needed longer to simmer in order to reduce the raw onion flavour.
     
  2. I've made this twice, and have been very pleased with it both times. I cooked it a little longer than 5 minutes though; if my calculations are correct (and my memory's working properly) I simmered it for fifteen to twenty minutes on fairly low heat while I cleaned the kitchen. This will likely become one of my favorite "quick-fix" recipes! Thanks! :)
     
  3. Lori, I'm sorry you did not like it. Did you cook it on the stove for long enough? That is what takes away the raw flavour.
     
  4. It was very easy and quick to make. I only used 3/4 of a small onion, but the raw onion flavor was very overpowering. Maybe if the onion was sauted first it would not be so strong. My family did not like it.
     
  5. EXCELLENT! So easy to make, all the ingredients were already around in the kitchen, this was done in no time. I think even a beginner cook would enjoy cooking this. I had this for lunch this afternoon. My mom and dad had some too and we all enjoyed it. I used about 3/4 tsp. of salt and 1/4 tsp. of black pepper. I totally forgot about adding water(it was my mistake, I was too busy singing my latest favourite song!). Due to that, the garlic in my soup tasted pretty strong. I'll add about 1.5 cups of water next time and use 1/2 a clove of garlic instead of one. I really enjoyed this one; it was light and nice! Thanks for a GREAT recipe and a WONDERFUL lunch!
