  • Heat the olive oil in pan on top of stove over medium heat until very hot.
  • Sear pork chops on both sides; remove from pan.
  • Reduce heat and sauté onion and garlic until soft.
  • Return pork chops to pan, placing them on top of onions and garlic.
  • Add a little water and cover pan tightly with lid.
  • Let simmer over medium heat until pork chops are well done, adding a little water as necessary to keep from burning.
  • Remove chops from pan and let the sauce cook until thickened.
  • Spoon over chops to serve.
  • Note: If you want more "gravy" add water and flour at the end to thicken.

  1. 5 stars! I prepared with ease last night and had for lunch today and it was just as good leftover. I served with rice and english peas. I followed the suggestion of adding water and flour for more gravy. I will make this again and again. It smells heavenly too.
     
  2. Delicious! The only change I made was to add white wine to the pan, instead of water. I think some sliced mushrooms would be a fantastic addition, as well.
     
  3. Used thicker boneless pork chops and it turned out amazing. Served it with some veggie rice, which made it the perfect weeknight supper. You'll love it!
     
  4. Very good, lots of flavor. I added chicken stock paste and mixed with the sauce. Added some flour to thicken. Could also make it with chicken. Would make again.
     
  5. The sirloin chops were tender and the first time I had made gravy from a rue since my grandmother showed me. My gravy was never as good her as hers. However, this recipe made me smack my lips. Even low sodium. Thanks for sharing.

  1. I loved this recipe!! I did add one tablespoon of brown sugar to the onions (also added a few mushrooms). Instead of adding water, I used a little chicken broth. The porkchops were fork tender. I served this with garlic mashed potatoes and creamed corn. Delicious!! I will definitely make this again.
     
  2. My DH and 16yr son loved it and to get them to both like something is a very good sign. The only thing missing was the salt. I liked Bergy's idea of mushrooms I may try that too. and instead of flour as a thickener I used corn starch. I will be using this recipe again and again as it seems pork chops need all the help they can get to taste anymore.
