One Skillet Rice, Broccoli & Chicken Dinner

  • Cook 1 pound of meat in 1 tbsp of hot oil in a large skillet or 10 minutes or until cooked through, stirring frequently.
  • Add the cream of chicken soup, water, and instant rice; stir and bring to a boil.
  • Stir in the broccoli.
  • Reduce heat to low; cover.
  • Cook 5 minutes or until heated through.
  • Stir before serving.

  1. This was really good and easy to throw together. Used cream of chicken with herbs -- since that was what I had, and added a little cheese to the top -- because, well, we love cheese! Next time I might try with leftover regular rice instead of minute rice (personal taste preference and good way to use leftover rice) Thanks!!

  3. I liked the ease of this recipe, but it was a bit bland for our tastes. I added some garlic powder but I don't think I'll make this again using the cream of chicken soup. It might be better with cheddar broccoli soup instead, or something with more of a kick. Thanks for posting though!
     
  4. TERRIFIC!! This is a great family meal! The only slight change I made was to use a garlic pepper seasoning on the chicken while sauteeing since I like a bit more background flavor!   5. This was very simple to make and it went a lot faster than I had thought it would. My boyfriend asked for seconds so that is always a good sign. Perfect for a quick meal after working all day!

Tweaks

  1. I make it just like this but instead of the condensed cream of chicken soup...i use cream of broccoli with a bit of mayo then I mix together the chicken, cream of broccoli and broccoli on top of instant rice and i add shredded cheese at the very end to top it off then i bake it and voila.

I am 22 years old and live in Virginia, very close to Charlottesville. I just recently moved into my own apartment and have gotten more into cooking since being out on my own. My boyfriend and I are actually working on building a house, that will hopefully be done by the end of this summer/beginning of fall. I am very excited about this! We are lucky because his dad owns a building company, so we are fortunate to be getting this house done by him. I work full time, at a community services board, in the Human Resources depeartment, so I like to find recipes that I can make in less than a half hour, since there is not much time once I get home. I have a 3 year old little boy, Aidan, who definitely keeps me busy. He is so independent and definitely knows what he wants/does not want! It is great watching him change each day a little more. He can be a picky eater, so I try to find things to make where I can take parts out of it that he will eat as well. I love warm weather - spring and summer ! I love the flowers that come out and driving with the windows down.
