One Egg Cake

ingredients

• 1⁄4 cup butter
• 2⁄3 cup sugar
• 1 egg
• 1 teaspoon vanilla
• 1 1⁄2 cups flour
• 2 teaspoons baking powder
• 1⁄2 cup milk

directions

1. Cream butter and sugar. Add unbeaten egg. Add vanilla. Beat thoroughly.
2. Mix flour and baking powder.
3. Add flour mix alternately with milk to creamed egg/butter/sugar mixture, beating each time for a smooth batter.
4. Pour into well-oiled loaf pan. Bake at 375 F for 35 minutes.

I made this tonight and it was fantastic! I did add 1/4 cup of chocolate chips, but even without them this cake would be lovely. Turned out light and fluffy. I will definitely be making this again.
