One Dish Spicy Chicken Macaroni and Cheese ( or Ham)

NOTE: Instead of the box mix you can use my homemade recipe for mac and cheese recipe #135662 Also, when using a lot of pantry items you can UP the taste and freshness level by adding some fresh ingredients like fresh parsley or other herbs, fresh cheese or even sneak in some fresh veggies like a little diced/minced celery, bell pepper, garlic or onion. Some green veggies like peas or broccoli would be a great addition here too! Consider this recipe as a spark to light your creativity!"

directions

  • Spray large skillet with cooking spray and saute chicken on medium-high heat for about 5 minute or until cooked through.
  • Drain liquid from tomatoes into a 2 cup liquid measuring cup and add enough hot water to measure 1-3/4 cups.
  • Add macaroni, tomatoes and the tomato liquid mixture to the pan and mix well.
  • Bring to boil and reduce heat to medium-low. Cover and simmer 9 to 10 minute or until macaroni is tender.
  • Remove from heat and stir in cheese sauce from mac and cheese package and sour cream until well blended.
  • Sprinkle with shredded cheese on top and cover.
  • Let stand 1 to 2 minute or until cheese is melted.
  • TIP: Reduced fat items can be used but I don't recommend nonfat.

  1. This quick little dinner saved me last night! I had chicken I HAD to cook up and it was one of those nights where things kept popping up that kept me from preparing dinner. By 9pm we were starved. To the rescue comes Mama! Quick and tasty and filling! Loved the rotel tomatoes with the mac and cheese. Thanks Hope, you're the bestest!
     
  2. Easy recipe and awesome flavor. I used ham instead of chicken. I was not confident that the liquid was adequate to properly cook the macaroni so added an extra cup of water. Sauce came out a little runny but we were still happy with the result. Will definitely make this again.

  4. That looks awful. Why not make the macaroni and cheese properly, i.e. don't use shortcut packets of instant - you will be surprised at how good the REAL thing is.
     
  5. Super fast and tasty dinner. I used tinned tomatoes without chilies as I don't personally like it spicy, but then I put hot sauce on it for my fiancé as he loves spice! Perfect compromise! This was the perfect weeknight dinner and is really delicious!

  1. I admit, I changed a lot here, but I wanted to thank you for the inspiration. I stuffed the chicken in large shells, and instead of the mac & cheese sauce used velvetta (omitted sour cream entirely), and smothered the lot of it with cheese. Yum. Thanks for sparking my creativity! :)
     
  2. I made this recipe on 10/2/09 for mine and SO's dinner.Except for a couple of minor changes the recipe was made as written. These are the changes that were made: instead of using the chicken breast, some leftover chicken that I had in the freezer was used.And I cut the sour cream down to 1/4 cup. Also, a bit of chili powder was added.The taste was very good and creamy with a slight " kick " from the chili powder. This will be made again. Thanks for posting and, " Keep Smiling :) "
