Here is a quick to make macaroon cookie.


  1. Heat oven to 350°F.
  2. Mix coconut, milk and vanilla in large bowl.
  3. Drop by teaspoonsful, about 1 inch apart, onto well-greased cookie sheets, pressing down ends of coconut with back of spoon.
  4. Bake 10 to 12 minutes or until golden brown.
  5. Immediately remove from cookie sheets.
  6. Cool on wire racks.

Fast, easy and delicious. I used half the recipe to fill very lightly greased eggcups, popped out on to cookie sheet - nice little domes - put a half glace-cherry on the top of each - and gave them an extra minute or so in the oven,. VERY popular with the kids (and others!).

I made these as a surprise birthday gift for my Stepdad. He loves macaroons and thought these were the best he had ever tasted. I found them to be very easy to prepare and tasted great. I will make this macaroon recipe my standard now.
