One-Bowl Chocolate Mayonnaise Cake With Mocha Frosting

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • For the cake; combine the flour, both sugars, baking powder, baking soda and salt in a large mixing bowl; add in the mayonnaise and oil, beat on medium speed of an electric mixer until thoroughly combined.
  • Carefully and slowly add in the hot brewed coffee and vanilla; beat until blended (about 1 minute).
  • Add in the mini chocolate chips; mix to combine.
  • Pour the batter into prepared baking dish.
  • Bake for about 30 minutes, or until cake tests done.
  • Cool completely on a wire rack.
  • For the mocha frosting; in a large bowl combine the boiling water with the coffee granules; stir until the granules completely dissolve.
  • Add in the marshmallow cream; beat on low speed until smooth.
  • Using a spatula fold in the Cool Whip topping.
  • Spread over the top of the completely cooled cake.
  • Sprinkle with chocolate shavings if desired.
  • Cut into slices and serve.
  • Delicious!

  1. I rarely bake as I am not good at it and my attempts usually flop. However, this cake turned out wonderfully! Very rich but not too sweet, and the coffee really adds a nice touch. And when you get one of those chocolate chips - yum! I was wondering if you think Kahlua could be substituted for some of the hot coffee. Thanks so much! Hungry Alice

This cake was so easy to prepare, and was just delicious. I had six guests, and all the women wanted the recipe because their men were so impressed. This was just the best.   3. This review is for the cake only, not the frosting. I probably shouldn't review this recipe at all because I made so many changes, but since I'm giving it 5 stars, hope it's okay. The changes were made simply because I had to work with what was on hand. I was out of chocolate chips and vanilla so those weren't used. There was only about 2/3 cup of cocoa and 1/2 cup of low-fat mayonnaise, so that's what I used. I added 1/2 cup of 2% plain yogurt to compensate for the missing mayonnaise and also added a spoonful of vinegar. I used cold coffee because the batter had to sit awhile waiting for its turn at the oven and I know from previous experience that adding hot liquids too soon can spoil a cake recipe. After baking I topped the cake with a broiled walnut topping. This made a delicious, rich, moist cake that was enjoyed by all. Thanks for the recipe.
