This is from my Mom's recipe cards. I have not tried this.
- 8 eggs
- 1⁄3 cup milk
- 1 (12 ounce) canluncheon meat, diced
- 1 (10 ounce) box frozen chopped spinach, cooked and drained
- 2 tablespoons butter
- Beat eggs with milk until fluffy.
- Add remaining ingredients except butter.
- Melt butter in skillet.
- Pour mixture into skillet.
- Cook over low heat five minutes or until firm and slightly brown on bottom.
