  • Boil potatoes in salted water until tender, about 20 to 30 minutes.
  • Drain and return to pan.
  • Heat olive oil, butter and milk and add to the potatoes.
  • Over heat, mash the potatoes.
  • Add vinegar, chives, salt and pepper.
