Olive Garden Shrimp Caprese

  1. Combine tomatoes, basil, olive oil, garlic, Italian seasoning and salt in a large bowl and blend thoroughly. Cover, set aside and marinate for at least 1 hour.
  2. Heat a large, nonstick skillet over medium heat. Add butter and let melt. Stir in white wine and bring to a boil. Add heavy cream and Parmesan cheese and bring to a simmer. Let sauce reduce to desired consistency.
  3. Add cooked, drained pasta and marinated tomatoes to skillet. Stir to thoroughly coat pasta with sauce.
  4. Transfer pasta and sauce to serving platter and top with mozzarella cheese.
  5. Grill or sauté shrimp until internal temperature reaches 150°F and set aside.
  6. Place serving platter in broiler for 2-3 minutes, or until cheese has melted.
  7. Top pasta with cooked shrimp and serve.

Wonderful and very similar to Olive Gardens dish. My boyfriend loved it. Make sure to use heavy whipping cream, and i used 1 cup instead and added a little extra wine and butter to the sauce, as well as mushrooms.

Absolutely wonderful! i made one change to accommodate a picky eater, instead of mixing in the tomatoe mixture in with the pasta and sauce, i added them to the shrimp as i still had them frying to cook the tomatoes, which added a nice thorough flavor to the shrimp. i then added it to the pasta and layer it between mozzarella and sauce. Definitely a must try and enjoy again and again!

Since we do not have an Olive Garden we search out recipes from there. This turned out really good - I used "Giant" shrimp- pinked up in the microwave without added spices since I was not sure how the pasta would be - and the pasta was great with it. The flavors of the sauce perked up the shrimp when I stirred them in before serving to heat through.
