  • Sauté beef in oil in large 10 quart pot until beef starts to brown.
  • Add onions, carrots, celery and tomatoes and simmer for about 10 minute.
  • Drain and rinse beans and add to pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles .
  • Simmer until celery and carrots are tender, about 45 minute.
  • NOTES : Makes 9 quarts! Just cut the recipe down for smaller batches.

  4. Super yummy!!! I halved the recipe and tried with ground turkey as other reviewers suggested. Also used chicken broth instead. Served with grated parmesan cheese and fresh parsley on top. This meal turned out great! Thanks for posting this amazing recipe.

This tastes exactly like Olive Garden and I am a harsh critic as this is the only thing I eat if I am sick, but, I made two changes--I used Mezzetta Arrabbiata pasta sauce instead of regular pasta sauce and Tabasco and I used ground turkey instead of beef (you can't tell). I halved this recipe and then weighed out the portions and half of the recipe makes 8 2cup bowls of soup, this equals about 340 calories per serving.
