Olive Garden Low Carb Zuppa Toscana Soup

- 354.88 ml onions
- 226.79 g bacon (sugar free)
- 453.59 g sausage (Jimmy Dean spicy works nice)
- 1892.0 ml water
- 3-4 minced garlic cloves
- 2 chicken bouillon cubes
- 946.36 ml kale
- 709.77-946.36 ml cauliflower (cut up in small pieces)
- 354.88 ml heavy cream
directions
- Fry bacon in a medium/large size skillet; drain fat, put on plate and let cool.
- In the same skillet cook the sausage and set aside ( I put it on the back burner).
- In a large soup/stew pan put cook onions until tender and clear.
- Add in garlic and cook for a minute.
- Add water and chicken boullion cubes.
- Start to tear the bacon into bite size pieces and add to the pot.
- Add sausage.
- Add cauliflower.
- Cook for 15 minutes (until cauliflower is soft).
- Add heavy cream.
- Add kale (I tear mine into bite size pieces).
- Simmer for 5-10 minutes.

This turned out great, though like a lot of others, I did some things differently. I added 3/4 block of Philadelphia cream cheese. I've been low carb for over a year now. Cream cheese is a staple in my diet and I new that it would thicken this soup and take it to a new level. I was so right. My cauliflower was spoiled so I had to omit. I used 2 quarts of chicken stock instead of the water and bouillon and added some chicken base. Finally, I also cut up and added some left over rotisserie chicken. I know you're probably thinking that after all these tweaks, it's not the same recipe, but it tastes amazing.

We really enjoyed this even though I left out the cauliflower and used half & half for the heavy cream. I probably used more kale too as I didn't want to waste any and we love it. I used chicken broth instead of the water and bouillon as a personal preference. Very good and one we really enjoyed and will make again. Thanks for sharing. Made for the "Love Train" 2011

I have made this several times. Here are my tweaks: I use frozen cauliflower that I chop up -- I grow my own and always have plenty in the freezer. If I am missing onions I reconstitute onion flakes, works just as well. Like so many, just use Chicken Broth -- but going to try the bone broth I made next time. Bacon is sometimes on short supply in my house so I use bacon bits. As for the sausage, I like Italian sausage rather than Jimmy Dean. . . I brown it in the oven so it is ready to go. Also use half n half instead of heavy cream. If I am not able to find fresh kale, baby spinach makes a nice substitute and easier to find at my little local grocery store in the middle of nowhere.
