Olive Dip

- 9 ounces pitted green olives, roughly chopped
- 3 tablespoons olive oil
- 1 (14 ounce) can chopped tomatoes
- 2 garlic cloves, peeled and minced
- 1⁄2 red onion, peeled and finely chopped
- 2 teaspoons tomato paste
- 1⁄2 teaspoon paprika
- 1⁄4 teaspoon cayenne pepper
directions
- Heat the olive oil in a saucepan, over a medium heat. Add the tomatoes, garlic, onion and tomato paste and bring to the boil.
- Reduce the heat and simmer gently for 5 minutes, then add the paprika, cayenne, olives and 4 tbs water.
- Simmer gently, uncovered for about 15 minutes, or until the dip thickens.
- Remove the saucepan from the heat and allow to cool to room temperature.
- If time allows, chill before serving.
