  • Heat the olive oil in a saucepan, over a medium heat. Add the tomatoes, garlic, onion and tomato paste and bring to the boil.
  • Reduce the heat and simmer gently for 5 minutes, then add the paprika, cayenne, olives and 4 tbs water.
  • Simmer gently, uncovered for about 15 minutes, or until the dip thickens.
  • Remove the saucepan from the heat and allow to cool to room temperature.
  • If time allows, chill before serving.
