Something quick and savoury. Good with taramasalata dip.
- 1⁄2 cup sliced pitted olive
- 1⁄2 cup chopped feta cheese
- 1⁄2 cup finely sliced spring onion
- 1⁄4 cup extra virgin olive oil
- 1 egg
- 1 cup milk
- 1 1⁄2 cups sifted self-raising flour
- Pre-heat the oven to 200°C.
- Combine all ingredients, stirring briefly until just combined. Place mixture into mini muffin tins and bake for about 10 minutes or until cooked.
