Old Time Favourite Lemon Square

"This is the best recipe for an Old Time Favourite. Not too sweet or too sour. Quick and easy, light and fresh tasting, works every time. It's called a square because it's cut into squares but make it in an 9 by13 pan."

  • Preheat oven to 350`.
  • Combine butter, flour and icing sugar to make bottom short crust.
  • Press into bottom of 9 x13 baking pan.
  • Bake at 350 for 10 minutes to set crust. Do Not brown.
  • Meanwhile beat eggs with flour, salt, baking powder, sugar and lemon juice.
  • Pour into pan over baked crust.
  • Bake at 350` for another 25 minutes.
  • Remove from oven and sprinkle with icing sugar.
  • Cool and cut into squares.
  • Notes:

  • Of course real butter and fresh lemon juice will make for a superior dessert but in a pinch it's still very good with oleo and bottled lemon juice.
