Old Lisbon Cod

  • Boil potatoes in salted water until cooked, drain and put in a deep serving dish.
  • meanwhile cut Cod into serving pieces and cook in a pan with water for 3 to 4 minutes.
  • then drain well and put aside.
  • heat olive oil in pan until hot, add garlic slices and remove from heat.
  • dip Cod in olive oil and garlic mixture, do NOT throw out this olive oil.
  • add 1 tablespoon of the olive oil/garlic to another pan and place cod in it.
  • top cod with bread crumbs and fry for 6 to 8 minutes.
  • when done place cod in serving dish with potatoes, and pour all the olive oil over it.
  • garnish with parsely.
  • when serving squeeze lemon juice over cod and potatoes and add a few dashes of tabasco sauce if desired.

  1. A hearty basic dish. We actually had this for breakfast before a long day of heavy yard work. I would back off some on the amount of olive oil unless you do a lot of physical labor to need those calories. It is simple to put together, although the instructions as written without Zaar formatting are difficult to follow.
