Old Kentucky Favorite Potato Salad

  • In large bowl, mix potatoes and the 4 diced eggs.
  • Add celery, onion,and relish.
  • In small bowl mix mayo, sugar, vinegar, milk, celery seed and garlic salt.
  • Slice remaining egg over potato salad and sprinkle with paprika.

  1. Inez: this recipe reminds me of my mother's recipe for potato salad. We, too, are from kentucky. Mom was forced to quit school when only thirteen years old and she went to work washing dishes in a neighborhood restaurant called "the village kitchen", in catlettsburg, ky. Years later she came away with a great cooking education. As I remember it she never deviated from her ingredients for the dressing. She insisted on miracle whip salad dressing, carnation evaporated milk, and probably used more than twice the amount of sugar that you call for in your recipe. I have hardly budged from the computer since finding recipezaar. From one kentucky hillbilly to another, thank you for all your great recipes. My family is enjoying them to the hilt.
     
  2. I can't believe this doesn't have 5 stars yet! Well, it does now! This salad is excellent. I didn't add the onion because my husband doesn't like it. I didn't have any relish, so I used chopped pickles. I used Miracle Whip for the dressing. The celery adds a nice crunch. This one's a winner!

  4. This is similiar to the potato salad I used to make but so much better. I was worried that there would be too much of an egg taste--but there wasn't at all--it was just perfect. I added one tomato, cut into wedges on top of the salad before sprinkling it with the final egg and paprika. Thanks MizzNezz this is the potato salad we will be having from now on.
     
  5. I was surprised that my family gave this four stars, as they usually aren't a fan of potato salads without mustard in them. They did request that I use less chopped celery next time, but otherwise had no objections to me straying from our usual potato salad recipe. I will make this again whenever we are wanting something a little different. Served as a side to grilled chicken and veggie skewers.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
