Old-Fashioned Potato Pancakes

- 709.77 ml shredded peeled potatoes
- 2 eggs, lightly beaten
- 59.14 ml grated onion
- 59.14 ml all-purpose flour
- 44.37 ml minced fresh parsley
- 4.92 ml salt
- 4.92 ml pepper
directions
- Rinse potatoes in cold water; drain thoroughly.
- In a bowl, mix potatoes, eggs, onion, flour, parsley, salt and pepper.
- Pour batter by 1/3 cupfuls onto a greased hot griddle.
- Fry 5-6 minutes on each side or until potatoes are tender and pancakes are golden brown.

I've done leaded glass work(stained glass), which I love; am working on counted cross stitch; and am willing to try any craft, at least once! I've also worked for a major insurance company as a case analyst.
