I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.
- 1⁄2 cup shortening
- 1⁄2 cup brown sugar
- 1⁄2 cup white sugar
- 1 egg, beaten
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1 cup crushed pineapple, drained

- 1⁄4 teaspoon salt
- 1⁄2 teaspoon vanilla
- Preheat oven to 350.
- Cream shortening and sugars together.
- Add egg and mix well.
- Add dry ingredients and mix well Add drained pineapple and mix well.
- Add nuts and flavoring, mix well (yes, again).
- Drop by spoonful onto greased baking sheet.
- Bake for 15-20 minutes.
excellent recipe. I had some pineapple to use up and what a treat these turned out to be. Even my picky husband liked these.
When I was small, many many years ago, my Grandma A used to make me pineapple cookies. I loved them. These are really close if I leave out the walnuts. Thank you so much for bringing back some very warm memories.
I really like these cookies. They're soft, moist and mildly flavored. They also freeze well. I had to use butter in place of the shortening, but they still turned out fantastic. This ones a keeper.
