- 1 large yellow onion, diced
- 236.59-354.88 ml celery, diced
- 29.58 ml butter
- 1892.72 ml potatoes, peeled and diced
- 453.59 g chicken broth
- 946.36 ml water
- 473.18 ml milk
- 473.18 ml corn
- 453.59 g bacon, cooked crisp and diced
- 6 eggs, hard boiled and diced
- 29.58 ml fresh parsley, chopped
- 9.85 ml salt
- 4.92 ml pepper
directions
- In a Large stock pot :Sauté the onion and celery in butter until soft.
- Add potatoes, chicken broth and water. Simmer for 25 minutes or until potatoes are cooked.
- Mash the potatoes just a little to make chowder thicker.
- Add milk, corn, bacon, and eggs.
- Sprinkle with parsley, salt, and pepper.
- Cover and simmer for 20 minutes.
- Serve warm.
