Old-Fashioned Jersey Peach Cobbler

The dough in this peach cobbler recipe is absolutely divine. The quick and easy cobbler recipes cannot compare! I usually make a couple of batches of the dough at a time. Then, when I want to make peach cobbler, the dish is ready to be put in the oven in 10 minutes. You will love this recipe - especially in the fall when peaches are soooo gooood!

  1. Mix the dough ingredients well with an electric mixer. The dough will need to sit in the fridge overnight, or you can freeze it for up to 3 months. There is enough dough to make about 1.5 cobbler recipes -- I don't modify the recipe for 1 cobbler because then you would need 2/3 of an egg or a small egg, and who buys those?.
  2. Preheat oven to 350.
  3. Peel the skin off the peaches and slice them. If you can't peel the peaches easily, they aren't ripe enough. You don't want them mushy though, just soft enough.
  4. Mix the peaches and the rest of the cobbler ingredients softly and throughly. Be sure not to smash the peaches!
  5. Pour cobbler ingredients into an 8x12 pan.
  6. Take pieces of dough in chunks of about 1T and push into cobbler. You want the chunks of dough to be pretty evenly distributed in the pan. Leave a little bit of room inbetween the chunks.
  7. Bake 50-55 minutes at 350.
  8. Serve warm with ice cream or refrigerate and sever chilled. Divine!

This is one awesome cobbler! I used the full batch of dough (what I didn't court sickness eating raw that is hehe) because we like the crust of a cobbler. I cut down the white sugar in the filling to 3/4 of a cup because it just seemed like a lot ot me and it was perfect that way. I also added 1 tsp of Almond Extract into the filling and it added a little something to the flavor I think. If you like Peach Cobbler, make this one!

This cobbler is beyond good!It smelled so enticing coming out of the oven I had to eat it as soon as it came out of the oven. It's good just on it's own! To make it, I used butter flavored crisco for the dough and in the cobbler I added just a little bit of allspice to it just because allspice is one of my favorite spices. I did have to use canned peaches instead of fresh because the fresh ones at the grocery store were lousy, I'm sure it'd be even better with fresh and am going to make it again once I get good fresh ones in my area again.
