When we cook bacon in the south, we save the drippings and use it for flavor in other foods. This is one of my favorite potato recipes
- 3 tablespoons bacon fat
- 5 idaho potatoes, thinly sliced
- 3 slices bacon, diced
- 1 onion, chopped
- salt and pepper
- chopped fresh parsley
- Heat bacon fat in cast iron skillet. Add potatoes, bacon, and onion; cook covered over medium heat for 15 to 20 minutes. Shake the pan while the potatoes are cooking so bacon and onion do not burn and turn the potatoes from time to time.
- Remove cover and cook until golden brown and crunchy, 10 to 12 minutes.
- sprinkle with salt, pepper, and parsley.
this is how I make them....Is there any other way?!?
I don't think I have tried a fried potato I didn't like. The bacon and onion helped to make a panful of flavorful potatoes. Thanks Recipe Fairy. Bullwinkle.
This recipe brings back memories everytime I make it of my grandfather. This are the best fried potatoes. You can use leftover bakes potatoes that have been stored in the refrigerator for this recipe. Also, you can crack an egg in it to make it a meal. MMMmmmm....good
