Old Fashioned Boiled Sultana (Raisin) Cake

I have been trusted with my grandmothers hand written recipes. This one has no date but comes from a Mrs MacDonald of Brisbane, Qld Australia. I am wondering if other fruit could be used (dried apricots or dates). It states to serve in slices with butter.

  1. In a pot, over the sultanas with water and boil for 7 minutes.
  2. Drain the sultanas well, but keep them in the pot.
  3. Add cubed butter and stir until the butter is melted.
  4. In a bowl, beal the eggs and sugar until thick.
  5. Add the flour, powder and vanilla.
  6. Pour the fruit mix into the flour mix and fold to combine.
  7. Bake in a greased and lined large sqaure cake tin.
  8. Bake at 175oC for 1 1/2 hours, check after 1 1/4 minutes.
  9. Do not ice/frost.
  10. Serve warm with butter.
