What a wonderful comfort type of breakfast!!! Just loved the combination of flavors of the onions, potatoes, bacon and eggs, perfect all in one pan meal!!! I did it a little different with the potatoes, in that, rather than boiling them, I just microwaved on high for 2 minutes and let cool a bit, then diced. I cut the recipe in half, but otherwise made a directed. Thanks Andi for sharing the wonderful breakfast recipe that we will be eating often. Made for Holiday Tag!!

This was good. I used canned diced potatoes and 3 tablespoons of hormel real bacon bits. I added cheddar cheese and about 1/2 teaspoon of pepper. I also added chived to the mixture. It didn't seem like enough eggs so I also added a total of seven eggs. We all enjoyed this and there wasn't anything left.

I had this for dinner! Very easy to make and very tasty and filling. I used cheddar, and topped with more cheddar and green onion. Thanks for this keeper.

This was nice and comforting for this bleary Sunday morning here in Washington. I make something similar very often as it is my favorite kind of breakfast - easy, hearty, and very satifying the whole morning through! I baked the potatoes the night before since I didn't have any already on hand. I did find that once I added them to the skillet and let them cook through they had become mushier that we would like but that is okay. That is the beauty of using leftovers is to get them eaten! I'm all for that. In that regard I did not have any bacon but I did have sausage links in the freezer so I thawed those out last night as well, cut them up, and pan fried as directed. Yummy! Easy to make, especially when cheating and using frozen shredded potatoes. We didn't add any of the fresh topping, as I forgot - it looked so good without it and I was hungry! Thanks for posting, Andi!! Made for I Recommend Tag Game.

This is great! Easy and filling. I especially liked the addition of the fresh toppings. It really made the flavors pop! I used all of the optional ingredients, leaving the Tabasco on the table for people to add as desired, and omitted the salt. Thanks for sharing!

Simple and delicious! I made this in my cast iron skillet using thawed frozen hashbrowns (the ore-ida kind)! We topped ours with some green onion and a bit of extra cheese! By the way we made this for our post Christmas supper -- in other words I was sick and tired of cooking and this was easy peasy to throw together! Thanks for posting this super easy winner! Made for Holiday Tag 2009.

I'm not giving this a star rating at this time, because I had to sub chicken breakfast sausages for the bacon, which I think pretty much ruined it. It wasn't awful, but it sure wasn't wonderful. I think, though, that with bacon, it would have been much, MUCH better! So my advice is: use bacon! Real, cured, pork bacon, not turkey bacon, and definitely not sausages. Since DH doesn't eat pork and DS doesn't like potatoes or onions much, I think I'll give it another try sometime as just a quick meal for me, using real bacon. It was easy to throw together. It made a plentiful amount of food, too, and wasn't expensive or time-consuming to put together. Thanks for posting, Andi!

This is a wonderful dish, great for breakfast and hearty enough for dinner. I used fresh small red potatoes and didn't boil them first, just cubed and sauted until they were cooked through. I was pretty generous with my "dash" of Tabasco and didn't use the optional garlic powder. This makes a great meal - thanks for posting the recipe!

Good. Not the world's most attractive breakfast, but tasty. And I always like finding ways to add vegetables to breakfast meals. I think next time I'll use uncooked potatoes and fry them with the onions. My cooked ones got a little soggy. Thanks for posting this.

Delish!! To me, the potatoes were what made this egg dish stand out. I made this for an inexpensive dinner and it was received well by all! My daughter asked when I'd make these again. Thanks, Andi, for posting a yummy dish that you could serve for breakfast, lunch or dinner!

This was so good and simple. I used egg beaters and canned potatoes. But what really made this stand out for us was that I used 2 slices of Virginia cured country ham instead of bacon because the recipe was just calling for it, and I had some to use up. Yummy Yummy in our tummies. We had this for breakfast, but will fix again for dinner soon, I'm sure.... Thanks Andi for such a great simple, filling and flavorful meal.

Andi thank you for a wonderful supper! I used a can of new potatoes that I sliced and fried in the onions. Had turkey bacon on hand and didnt have much bacon grease so I added some butter to fry everything. For this to taste over the top, definitely use real bacon. We arent real spicy/hot eaters so I omitted the tobasco sauce but did add the cheese and tomato. Also sprinkled some bacon bits on top before serving. Very easy to get a great meal on the table for supper! Thank you hon, will definitely making this again.

Pls refer to my prior review of SQ Ferris Wheel Chicken Salad. I felt your recipe deserved an equally dedicated effort as written. I had just finished feeding our cats & they were content. Siggi walked into the comp rm, said he was near starvation & asked *What does a guy have to do to get some food around here* ? I had already hung up the laundry, so I went to the closest farm for supplies & then a hothouse for a tomato. When home again, I went right to my kitchen & quick as a wink put this *plate of goodness* brunch together for us. I told him at the table about our tag exchange early today & said his breakfast was part of the joke we shared. A little later, he snuck up on me to say *Dennis and I eat pretty good* . *Feel free to make more joke picks like that one* . Thx for sharing this recipe w/us, but I do not think I am the farm girl type. Too much to do on a farm & I need my nap now. :-)
