Japanese Rice Porridge


  2. Wash Japanese rice well and drain. Put water and rice in a pan. (*an earthenware pot is suitable.) Leave it for 30 minutes. Put the pan on medium heat and bring to boil. Turn down the heat and cook the rice for 30-40 minutes. Add salt before serving. Sprinkle chopped green onion and sesame seeds if you wish.
  3. This is a recipe to make plain okayu. You might want to add some vegetables or meat, depending on your appetite.

Good basic Okayu recipe, can be made sweet as well as savoury; good if you are feeling under the weather :)

I tried this with American rice and no sesame seed; I was expecting rice soup but ended up with something with the flavor of rice and the mouth feel of oatmeal -- wonderful! Can't wait to try again with my next bag of Botan. Seems to me a logical add-in would be minced dried seaweed of some sort.
