Recipe calls for native wateryam tubers, but yams can be used instead. Flavored with cilantro and onion, these make a great side for any meat dish. I found this at ModernAfricanCuisine.blogspot.com. Posting for ZWT7; Africa.

Ingredients Nutrition

  • 4 yams (sweetpotato or wateryam tuber)
  • 1 medium onion
  • cilantro (hand full-chopped)
  • 12 cup flour
  • 2 eggs
  • salt & freshly ground black pepper
  • oil


  1. Peel and grate yams, squeeze out any excess water; add egg, flour, onion and cilantro; season with salt and pepper.
  2. Heat about 1 " of oil in skillet; Drop yam mixture by large spoonfuls into hot oil; cook 3-4 minute on each side or until golden brown.
