I increased the garlic, salt and pepper in the mashed potatoes, and poached the eggs separately and added them after the casserole came out of the oven. Scarfed down in almost complete silence by the boys, which is a rare occurrence! Next time I'll add the cheese to the potatoes and try topping with a smoother melting cheese ... I really wasn't crazy about the texture of the Swiss on top, although I loved the flavor.

Made this recipe as given & had it on the table when a neighbor couple were here for a simple dinner! A very enjoyable & comforting dish, for sure! Thanks for sharing the recipe! [Tagged & made in Please Review My Recipe]

This was wonderful! Filling and delicious. Easy to prepare, and came together beautifully. I can also see this being a great way to use up leftover mashed potatoes too. Thanks for sharing!

What a lovely surprise Chocolatl. What's not to like, sausage, eggs, green onions, mashed potatoes and cheese. It was quick and easy to make. It looked amazing and tasted even better. The flavor was excellent. Thanks for sharing a recipe that I will be making for my siblings when they come to visit. Made for ZWT7 for Witchin Kitchen.

We really enjoyed the potato and sausage portion of this dish, but the eggs were a little odd...The yolks came out similar to hard boiled and the whites were just barely set. I would make this again minus the eggs, it was still very flavorful. Made for ZWT-7~THE HOT PINK LADIES.

This recipe was a different way for us to eat mash potatoes, smoked sausage and eggs. The potatoes had lots of flavor from the smoked sausage. My eggs yolks were hard, not runny, but had a hard time getting the whites firm, so over cooked the eggs. Need to keep a close eye on the eggs after the first 20 minutes, unlike me who was doing a couple of other things and didn't get back quick enough before the eggs yolks got hard. Followed recipe as written. This is a easy recipe to make. Thank You. Made for ZWT7~Emerald City Shakers.
