This very simple yet very tasty and nutritious snack was introduced to me by a friend back in the early 1980s. I have lost track of this friend, but I think of her whenever I prepare this -- and I named it in her honor.

Ingredients Nutrition

Directions

  1. Cut the apple in half and remove the seeds and core.
  2. Spread peanut butter over the cut surface of each apple half.
  3. Sprinkle the raisins over the peanut butter and push them down gently so that they will not fall off while you are eating this with your hands.
  4. Variation: Use chopped pecans or walnuts instead of or in addition to the raisins.

This was really good, more filling that I had anticipated. I used chopped pecans and golden raisins. It made for a perfect mid-afternoon snack. [Made for Zaar Cookbook Tag]
